Because they do not accept the 1st. Advent of Jesus; as they at present do not accept Jesus as their Messiah!
When the events of Zech.12:10 are in play; then they will for first time see their error!
Re. your question above; the teachings of the Jewish Rabbi’s is the worst example of “man’s philosophy” (Col. 2:8–10); which at its worst teaches that Jesus was not their Prophesied Messiah; and that he is yet to appear from “human stock”, to solve their problems!
The changes that the Pharisees were highly involved in re. the Jewish teachings, has hardened over the last 2,000 years, and will not revert to correct understanding until the events of Zech.12:10!
